XP and W2K are built on the same basic core, but XP is updated and is different than
W2K. Most drivers will work, but as hardware and software is developed years after
W2K was released, there are enough differences that W2K won't be supported. They
have written the installer to check the system.

In fact, on the all-in-ones, security is an issue as hacks have been done that allow
it to be compromised so that someone can read what's sent to the printer AND what
you have scanned. They can also access the card readers in them too.. W2K doesn't
have updates to the core system to allow some of the software to work properly.
It's along the same line as the reasons that IE 6 is the last version of IE supported
on W2K. Changes in XP v W2K, W2K won't work correctly with IE 7 and higher. (That's
according to MS)

Anyway, the same questions have been asked here before and no one had an answer that
worked as far as I have ever observed. Trying to trick an NT system is much harder
than Win 9X. Have you tried running the installer in compatibility mode? Sometimes
that can be done. Just depends on how the software was written that you are trying
to install.
